Hiiros™ Miso
Soba Noodles

Ingredients
- 1 package Nature Fresh Farms Hiiros™ Tomatoes (about 3 cups)
- 3 tbsp vegetable oil
- 2 tbsp seasoned rice vinegar
- 2 tbsp white or yellow miso paste
- 1 tbsp sodium-reduced soy sauce
- 1 tbsp pure maple syrup
- 2 tsp grated ginger
- 2 tsp toasted sesame oil
- 1 package (8 oz) soba noodles
- 3 green onions, thinly sliced
- 1 ½ tsp toasted sesame seeds
Directions
Step 1
Wash all produce before preparing your meal.
Step 2
Preheat oven to 425°F. Place Hiiros™ Tomatoes in a non-metallic square or round baking dish.
Step 3
To prepare Miso Dressing: In a large bowl, whisk together vegetable oil, vinegar, miso, soy sauce, maple syrup, ginger, and sesame oil. Remove and pour half of the dressing over the Tomatoes, tossing to coat.
Step 4
Roast, stirring once, until Tomatoes begin to burst, about 15 minutes.
Step 5
Cook soba noodles in boiling water according to package instructions until tender. Drain and rinse with cold water; drain well.
Step 6
Toss noodles with remaining dressing in large bowl; pour in roasted Tomatoes and their juices. Add green onions, tossing well. Divide among bowls and top with sesame seeds.
Chef's Tips
Serve warm or chilled. While roasting, if dressing is evaporating before Tomatoes burst on their own, use the back of a large spoon to lightly mash some of the Tomatoes and cause some of their juices to mingle with the dressing.
