Grilled Chicken Veracruz

SERVES 6 People
Ingredients
- 2 cups Nature Fresh Farms® Cocktail Tomato, diced
- 4 cloves of garlic, peed and chopped
- 1/2 jalapeño peppers, seeded and dice
- 2 oz. cup olive oil
- 4 oz. green olives, coarsely chopped
- 1 tbsp. oregano
- 1/4 cup water
- 6 boneless skinless chicken breasts
Directions
Step 1
Dice Cocktail Tomatoes and jalapeno peppers.
Step 2
Chop garlic and green olives.
Step 3
Place chicken breast on a hot grill & season lightly with salt and pepper, if desired.
Step 4
Grill for 4 minutes per side or until internal temperature is 165 degrees.
Step 5
While chicken breast is cooking, heat olive oil in a medium sauce pan. Briefly sauté garlic, being careful not to burn it.
Step 6
Add Tomatoes and cook over low heat until tomatoes are soft, approximately 5 minutes.
Step 7
Add remaining ingredients and let simmer for an additional 10 minutes.

Replace the chicken with grilled white fish for a great seafood flare.
