Creamy Tomato Bell Pepper Soup

Ingredients
- 4 Nature Fresh Farms® Sauci Roma Tomatoes
- 2 Nature Fresh Farms® Red Bell Peppers
- 1 jalapeño pepper
- 6 cups chicken or vegetable stock
- 5 garlic cloves
- 1 medium onion
- 3 tbsp. olive oil
- ¼ cup parsley
- ½ cup 10% cream
- Salt & pepper to taste
Directions
Step 1
Dice Roma Tomatoes, Bell Peppers, jalapeno peppers, onion and parsley.
Step 2
Add olive oil to a soup pot. When heated, add all the vegetables except the parsley.
Step 3
Sauté vegetables until golden brown.
Step 4
Add stock to the mixture and boil for approximately 5-10 minutes, or until all vegetables are cooked and soft. Add cream.
Step 5
Season with salt & pepper to your preference.
Step 6
Puree soup with hand blender until creamy, serve and garnish with parsley.
