Chicken & Pepper Cobb Salad

Ingredients
- 1 cup Nature Fresh Farms® Long English Cucumber
- 1 cup Nature Fresh Farms® Beefsteak Tomatoes
- 1 cup Nature Fresh Farms® Bell Pepper
- 1 cup Nature Fresh Farms® shredded lettuce
- 2 hardboiled eggs, sliced into 8 slices
- 2 grilled chicken
- 2 tbsp. virgin olive oil
- 3 tsp. PC white balsamic vinegar
- Salt and pepper
Directions
Step 1
Wash Cucumber, Tomato, lettuce, Bell Pepper and cut into pieces.
Step 2
On a platter arrange lettuce, Bell Pepper, cucumber, grilled chicken and egg.
Step 3
In a small sized bowl add olive oil and white balsamic vinegar.
Step 4
Whisk until well incorporated and evenly drizzle over salad.
Chef's Tips
Using all the same ingredients, add a tortilla or a flat bread to make a great grab & go lunch for work or school!
