Stewed Tomatoes and Poached Eggs

Ingredients
- 8 Nature Fresh Farms® cocktail tomatoes, halved
- 2 Nature Fresh Farms® bell peppers
- 4 eggs
- 1 onion, sliced
- 2 cloves of garlic, thinly sliced
- ½ cup chicken stock
- ¼ cup parmesan cheese
- ¼ cup parsley
Directions
Step 1
Wash and slice cocktail tomatoes into halves.
Step 2
Wash and slice bell peppers, peel and slice onion, and dice garlic.
Step 3
In a preheated non-stick pan add peppers, onions, tomatoes, and garlic and sauté for 2 to 3 minutes.
Step 4
Add stock and simmer for 15 minutes.
Step 5
Once vegetables are tender, add four eggs and cover with a lid.
Step 6
Cook eggs to desired doneness.
Step 7
Garnish with Parmesan cheese and fresh chopped parsley.
