Tomato Gazpacho

Ingredients
- 6 Nature Fresh Farms® Taste Good Feel Good™ Red Beefsteak Tomatoes, cored
- 1 large Red Bell Pepper, seeded & diced
- 1 English cucumber
- 2 tbsp. extra virgin olive oil
- 1 sweet onion, diced
- 2 garlic cloves, finely minced
- 1/2 lemon, juiced
- 2 tbsp. red wine vinegar
- 1/4 bunch parsley, chopped
- Salt and freshly ground black pepper to taste
- Cold water as needed
Directions
Step 1
Cut tomatoes into halves and add to a blender with olive oil, lemon juice, vinegar, garlic, salt & pepper.
Step 2
Pulse until tomatoes are pureed. If the consistency of the tomatoes is too thick, add water.
Step 3
Pour into a large glass bowl, or other glass serving container.
Step 4
Add the rest of the ingredients. Stir well, cover, and let sit in fridge for 1 hour.
Step 5
Ladle into chilled bowls and serve with parsley.
Step 6
Top with extra pieces of the vegetables to garnish, if desired.
