Roasted Strawberries
with Ricotta

Ingredients

  • 2 pkgs (12 oz each) Nature Fresh Farms® Little Obsessions™ Organic Strawberries
  • 1 tsp fresh lemon juice
  • ¼ cup granulated sugar
  • 1 fresh vanilla bean
  • 1 cup extra smooth ricotta cheese
  • 1 tsp grated lemon zest

Directions

Step 1

Wash all produce before preparing your meal. Preheat oven to 425°F.

Step 2

Slice half the berries in half. Place in bowl. Add remaining whole berries.

Step 3

Slice vanilla bean in half lengthwise. Use the back of a small knife to gently scrape out seeds.

Step 4

Toss strawberries with ½ tsp of the lemon juice, 2 tbsp of the sugar, the vanilla bean and seeds.

Step 5

Place on a baking sheet and roast until berries begin to soften about 10 minutes. Set aside to cool. Juices will thicken lightly as the fruit cools.

Step 6

In a small bowl, stir ricotta with remaining 1/2 tsp of lemon juice ,2 tbsp sugar and the lemon zest. Cover and refrigerate for at least 1 hour or up to 3 days.

Step 7

Remove vanilla bean from berries before serving.

Step 8

Spoon ricotta and roasted berries over waffles, toasted sourdough, crumpets or English muffins

Chef's Tips

Use strawberry tops and leaves to infuse water or vinegar. If making a smoothie, toss the whole berries in, tops and all!
