Glows™ Cherry Tomato Confit
with Roasted Garlic

Ingredients
- 2 pkg (12 oz each) Nature Fresh Farms® Glows™ Cherry Tomatoes
- 1 large bulb garlic, cut crosswise in half
- 1 cup extra-virgin olive oil
- Sea salt and freshly ground black pepper
- 4 sprigs fresh thyme, plus more for garnish
- 2 sprigs fresh basil
Directions
Step 1
Wash all produce before preparing your meal.
Step 2
Preheat oven to 250°F.
Step 3
Place tomatoes in a non-metallic casserole dish or large deep dish pie plate (around 11 cups volume). Nestle in garlic halves, cut sides up.
Step 4
Pour olive oil over the garlic and into the dish. Season with salt and pepper to taste; tuck in thyme sprigs.
Step 5
Bake, uncovered for 1-½ to 2 hours, spooning some of the oil over the garlic once or twice during bake time. Tomatoes should be tender but still holding their shape and garlic should be soft. Stir in basil sprigs and more thyme. Let cool at least 10 minutes.
Step 6
Pack confit tomatoes into small jars with enough of the oil to cover them.
Chef's Tips
Serve confit tomatoes with creamy cheese-topped sourdough toasts, or add to everything from omelets to pasta dishes. Use the flavored tomato oil to dip or drizzle over salads, grilled fish or focaccia. Squeeze out garlic cloves and use to spread on crostini or stir into hummus.
