Hummus-Stuffed Mini Sweet Peppers

Ingredients
- 1 package NatureFresh Farms® Sweet Thrills™ Seedless Mini Sweet Peppers
- 19 ounce can of chickpeas
- ¼ cup tahini paste
- 2 cloves of fresh garlic
- 2 tablespoons extra virgin olive oil
- 1 lemon
- 2 tablespoons fresh parsley
Directions
Step 1
Wash all vegetables before cutting.
Step 2
Toss drained chickpeas into a food processor or blender.
Step 3
Mince garlic cloves. Finely chop fresh parsley.
Step 4
Zest and juice the lemon.
Step 5
Add tahini paste, parsley, lemon zest and juice, garlic, and olive oil to the blender.
Step 6
Puree until smooth, adding a splash of water to create a smooth, creamy texture.
Step 7
Cut the tops of the Mini Sweet Peppers off.
Step 8
Put hummus into a squeeze bottle. Use the bottle to fill each Sweet Thrills™ Seedless Mini Peppers with hummus mixture.
Step 9
Serve and enjoy!

There is always room for variation with hummus. Try adding ingredients such as olives, tomatoes, roasted peppers, or green onions!
