Grilled Tomato Salsa

Ingredients

  • 2 pkgs (12 oz each) Nature Fresh Farms®
    Zens™ Yellow Cherry Tomatoes
  • ½ red onion
  • 1 ½ tbsp capers
  • Salt and freshly ground black pepper
  • 1/3 cup coriander leaves
  • 2 tbsp olive oil
  • 2 tbsp fresh lime juice

Directions

Step 1

Wash all produce before preparing your meal. Preheat barbeque to high.

Step 2

Dice red onion. Place in a bowl. Add tomatoes and capers and season with salt and pepper to taste. Toss to combine. Place a reusable grill mat on the preheated grill. Pour tomato mixture onto the grill mat. Arrange to ensure even grilling and avoid overcrowding.

Step 3

Close cover and grill about 5 minutes, stirring once until charred and tomatoes are starting to soften.

Step 4

Transfer grilled tomato mixture to a serving bowl. Add coriander, olive oil and lime juice.

Step 5

Serve warm over grilled fish or chicken or toasted sourdough.

Chef's Tips

Tomatoes can also be charred in a hot, cast-iron pan on the BBQ or on the cooktop.
