Ombrés™ Tortellini
with Garlic Butter

Ingredients

  • ½ cup unsalted butter
  • 2 cloves garlic, minced
  • 1 pkg (12 oz) Nature Fresh Farms® Ombrés™ Tomatoes (about 3 cups)
  • Sea salt and freshly ground black pepper
  • 2 pkg (12 oz each) cheese-filled fresh tortellini
  • ¼ cup loosely packed torn fresh basil leaves
  • ¼ cup finely grated Parmesan cheese, plus more for serving

Directions

Step 1

Wash all produce before preparing your meal.

Step 2

Preheat oven to 375°F. Melt butter in a small saucepan over medium heat. Add garlic, salt and pepper to taste; simmer 1 minute.

Step 3

Place tomatoes in a 13- x 9-inch non-metallic baking dish; drizzle garlic butter on top, tossing to coat. Roast until tomatoes are softened and beginning to burst, 20 to 25 minutes.

Step 4

In large saucepan of boiling salted water, cook pasta according to package instructions until tender (about 6 to 8 minutes). Drain well.

Step 5

Using the back of a large spoon, mash some of the tomatoes slightly; add cooked tortellini to the baking dish. Toss gently with roasted tomatoes to coat. Add basil, Parmesan and salt and pepper to taste; gently toss again.

Chef's Tips

For optimal flavor and best results, choose quality Parmigiano-Reggiano cheese.
