Josianne’s Minty Greek Salad

Ingredients

  • 1 Nature Fresh Farms® Taste Good Feel Good™ Long English Cucumber, sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted
  • 1 cup feta cheese, crumbled
  • 1/2 cup fresh mint leaves, chopped
  • 6 tbsp. olive oil
  • 3 tbsp. fresh lemon juice
  • 1 tsp dried oregano
  • Salt & pepper, to taste

Directions

Step 1

In a large bowl, combine cucumber, cherry tomatoes, red onion, and Kalamata olives.

Step 2

Sprinkle crumbled feta and chopped mint over the vegetables.

Step 3

Whisk together olive oil, lemon juice, oregano, salt, and pepper, then drizzle over the salad.

Step 4

Toss gently to combine and serve immediately—a crisp, vibrant mix that shows collaboration in every bite.
