Bell Pepper Cornbread

Ingredients
- 1 Nature Fresh Farms® red bell pepper, diced
- 1 cup yellow cornmeal
- ½ cup all-purpose flour
- 3 tbsp. sugar
- 2 tsp. baking powder
- 3/4 cup canned creamed corn
- ¼ cup butter, melted
- 1 large egg, beaten to blend
- 1 tsp. red chili flakes
- Salt and pepper to taste
Directions
Step 1
Wash produce before baking.
Step 2
Position rack in center of oven and preheat it to 400°F.
Step 3
Butter an 8-inch square baking pan.
Step 4
Whisk cornmeal, flour, sugar, red chili flakes, baking powder, salt and pepper in a large bowl to blend. Add creamed corn, red bell peppers, butter and egg. Mix everything together to form batter.
Step 5
Spoon batter into baking pan.
Step 6
Bake cornbread for about 20 minutes, until the edges begin to pull away from the sides of the pan. To check if the bread is completely baked, pick it with a toothpick in the middle of the pan; if it is clean the bread has finished baking.
Step 7
Remove bread from the pan once cooled.
