Heirloom & Bell Pepper Frittata

Ingredients

  • 1 cup Nature Fresh Farms® heirloom tomato, diced
  • 1 cup Nature Fresh Farms® bell pepper, diced
  • ½ cup onion, diced
  • 2 cup spinach
  • 6 eggs
  • Salt & pepper to taste

Directions

Step 1

Preheat oven to 350 degrees.

Step 2

On a stove-top, add onions and peppers into a heated sauté pan.

Step 3

Cook for 1 minute, then add tomatoes and spinach.

Step 4

Cook until spinach is wilted.

Step 5

Place mixture in a non-stick casserole dish.

Step 6

In a separate bowl, whisk eggs together with salt and pepper and beat until they are fluffy.

Step 7

Pour egg mixture over vegetables.

Step 8

Bake uncovered for 20 minutes in the oven.
