Grilled Mini Sweet Peppers with Feta

Ingredients
- 1 pkg (1.5 lb) NatureFresh® Farms Mini Sweet Peppers
- 1 Red Onion
- Olive oil
- Salt and pepper
- Topping:
- 2/3 cup feta cheese
- 1 tbsp oregano leaves, chopped
- 1 tbsp lemon juice
- 1 tbsp olive oil
- Freshly ground black pepper
Directions
Step 1
Wash all produce before preparing your meal. Preheat barbecue.
Step 2
Slice onion into small wedges. Skewer onions alternating with whole sweet peppers.
Step 3
Season a little olive oil with salt and pepper. Brush over vegetables.
Step 4
Barbecue over medium high heat until nicely charred.
Step 5
In the meantime, Stir crumbled feta with oregano, lemon juice, oil and pepper.
Step 6
Serve peppers topped with seasoned feta mixture.
Chef's Tips
Do you have an abundance of peppers in the fridge? This is the time to use them up. BBQ more than you need and refrigerate the rest. The leftovers will be great in a sandwich or in a dinner salad. Chop them up and use in our Snappy After School Snack Dip. Use as a garnish for your Caesar cocktail.
