Tomato, Chickpea, & Cucumber Salad

Ingredients

  • 1 cup Nature Fresh Farms® Sweet Thrills™ Medley Tomatoes
  • 1 Nature Fresh Farms® Taste Good Feel Good™ Yellow Bell Pepper
  • ½ cup Nature Fresh Farms® Taste Good Feel Good™ Long English Cucumber
  • 1 cup chickpeas
  • ½ cup fresh parsley
  • ¼ cup crumbled feta
  • 2 tbsp. olive oil
  • 3 tbsp. red wine vinegar
  • 1 garlic clove
  • 1 pinch cayenne pepper
  • Salt & Pepper to taste

Directions

Step 1

Halve Grape Tomatoes, while chopping Bell Pepper, Cucumber, parsley, and garlic clove.

Step 2

Add all ingredients into a large bowl, toss well.

Step 3

Cover and refrigerate for a minimum of 20 minutes.

Chef's Tips

This is a great salad to make into a pita sandwich, just drain any excess liquid and add your favorite greens.
